
Baked Breakfast Burritos

Directions
1Heat olive oil in large skillet add potato. Allow it to cook on one side before flipping, when crispy remove and set aside.
2Add black beans (or cook the turkey sausage) and 1/2 cup of sauce and set aside.
3Add eggs in skillet on low heat and softly scramble. Add potatoes, beans, and 1 Tbsp. cilantro.
4Spray a 9x13” pan and add layer of sauce on bottom. Fill each tortilla with mixture and place seam down in pan. Pour remaining sauce on top, sprinkle with cheese and remaining cilantro.
5Bake at 350 degrees for 10-15 minutes.
