Cauliflower Fried Rice

Directions

1Add the carrots, onion and garlic to a large pan with oil. Cook until soft.

2Pulse cauliflower florets through a food processor until fine texture, add to vegetables.

3Scramble eggs and chop into pieces, add to pan.

4Add soy sauce and black pepper.

2 cloves minced garlic

Cauliflower head

2 eggs

3 tbsp. low-sodium soy sauce

1 tbsp. sesame oil
