1Add the olive oil and peppers, onion and garlic to a large pot and sauté.
2Add shredded chicken, beans, tomatoes, broth, and seasoning (and if adding rice you may need to add 1-2 cups water). Bring the soup to a boil. Lower the heat and simmer for 15-20 minutes (or until rice is tender).
3Top with your choice of cheese, avocado, jalapeno, etc.
