Flatbread Pizza with White Beans

Directions

1Preheat oven to 400 degrees.

2In a food processor, make white bean puree by adding beans, olive oil and slowly adding water to reach desired consistency. (Optional: you may add tomatoes or sun-dried tomatoes to the processor to make more of a red sauce.)

3Spread white bean puree over flatbread.

4Chop chosen vegetables and evenly distribute over pizzas.

5Top with mozzarella cheese.

6Bake for 10 minutes or until cheese is melted.

Ingredients

15 ounce can of white beans, drained and rinsed

1 tbsp. olive oil

1/4-1/2+ cup water

Vegetables of choice (broccoli, peppers, tomato, asparagus, zucchini, etc.)

Shredded mozzarella cheese

Flatbread
