Lentil Stuffed Peppers

Directions

1Halve the bell peppers and remove seeds. Steam in water for 5 minutes.

2Cook lentils and quinoa according to package.

3Sauté garlic, squash, tomatoes and spices. Add lentils and beans.

4Place peppers on baking dish and fill with mixture. Sprinkle with cheese.

5Bake at 350 degrees for 15 minutes.

1/2 cup dried lentils

15 ounce can black beans

1/2 cup dried quinoa

3 cloves minced garlic

2 diced yellow squash

1 cup grape tomatoes

1 Tbsp. fajita seasoning

1 Tbsp. olive oil

1 cup cheese (optional)
