Roasted Pepper and Tomato Egg Casserole

Directions

1Preheat oven to 375 and spray a 9x13” pan with non-stick spray.

2Place peppers on the bottom of the baking dish and sprinkle with oregano. Roast for 10 minutes.

3Slice cherry tomatoes in half and add to the peppers and roast for another 10 minutes.

4Break 12 eggs and beat until yolks are combined.

5Sprinkle 1 cup of feta cheese over the vegetables and then pour the eggs over top.

6Cook for 25 minutes or until eggs are set.

Bell pepper, one pepper sliced into thin strips

Cherry tomatoes, 1 container sliced

1 cup feta cheese

12 eggs

2 Tbsp. Oregano
