Spaghetti Squash Casserole

Directions

1Preheat oven to 375 degrees. Cut squash in half, scoop out seeds, place face down with olive oil and bake for 40 minutes. Let cool then string out squash center using a fork.

2In a large skillet, add turkey, onion, and pepper. Add tomatoes, garlic and seasoning. Cook until most liquid is removed. Remove from heat, add spaghetti squash and mix together.

3In a 8x8” baking dish, spray with olive oil. Add half of mixture, 1/2 cup cheese, then remaining mixture, and 1/2 cup cheese.

4Bake at 350 degrees, uncovered, for 20 minutes.

Spaghetti squash (~2 pounds)

Olive oil

Ground turkey breast (1 pound)

1 red onion, diced

1 bell pepper, diced

15-ounce can of diced tomato, drained

3 cloves minced garlic

1 tsp. cumin

1 tsp. chili powder

1 tsp. paprika

1/2 tsp. red pepper flakes

1 cup grated cheese
